Abstract Superoxide dismutase (SOD), an important natural free radical scavenger, plays an important role in anti-oxidation and anti-aging. In recent years, SOD have shown great value and development prospects in many areas. The microbial fermentation is a very effective way to obtain SOD products, so many researchers are studying on the production of SOD fermentation. The aim is to provide a reference for the further development and utilization of SOD products in China, mainly from the breeding of SOD high-yield strains, the optimization of the culture conditions and the culture medium components to improve the SOD production and the improvement of separation and purification process for SOD.
